AUSTIN (KXAN) — Fans of spicy cuisine came together Saturday to celebrate the 50th anniversary of the Texas Chili Parlor, enjoying chili, drinks, and live music.
The event featured a variety of chili options, from pork to beef, alongside the parlor’s signature Mad Dog Margaritas and beer.
Co-owners Catherine Zublin Spangler and Dave Zublin marked the milestone with both joy and reflection, noting the absence of their late brother and original owner, Scott Zublin.
“This is our brother’s restaurant. It was very important to him and we’re not going to change that,” Dave Zublin said. “It’s thriving because we have awesome regulars who like to come here … The staff is amazing, the food is great … we’re committed to keeping this place thriving.”
Since opening in 1976 along Lavaca Street, the hole-in-the-wall Tex-Mex spot has become a local favorite, known for its authentic flavors and loyal customer base.
“The legacy continues,” Catherine Spangler added, highlighting the enduring community support that has helped the restaurant reach half a century in business.
